Oatmeal Cookies

3/4 cup butter, softened (no substitutes)

1 1/2 cup granulated sugar

2 TBSP Molasses

1 tsp. baking powder

1/4 tsp. baking soda

2 large eggs

1 tsp. pure vanilla extract

2 cups quick oats

1 3/4 cup all-purpose flour

1/2 cup chocolate chips, raisins, dried cranberries, or dried cherries

Preheat oven to 375F. Place butter, sugar, and molasses in a large mixing bowl and beat until mixture is creamed. Add baking powder, baking soda, eggs, and vanilla and beat again until well combined. Stir in flour and oats. Then stir in chocolate chips, raisins, dried cranberries, or dried cherries. You could also add a handful of chopped nuts at this point, if desired.

Drop dough by rounded tablespoons onto an ungreased cookie sheet (or use a silicone mat). Bake at 375F for about 8 minutes or until a golden brown and no longer shiny. Remove to a cooling rack immediately. Makes 2-3 dozen good sized cookies.
