
1 stick butter (1/2 cup), melted
Sugar substitute to equal 1 cup of granulated sugar
4 eggs
1/4 – 1/2 cup cocoa powder
1/2 cup almond flour
1/4 tsp. baking powder
Shake of salt, preferably sea salt
1 tsp. vanilla extract
Large handful of nuts (optional)
Mix together butter and sugar substitute until well blended and there are no clumps of sugar sub remaining. Beat eggs lightly into the mixture. Then add vanilla, cocoa, and almond flour. Add baking powder and a shake of salt. When all of that is blended nicely, add a handful of chopped nuts (if desired). Put in a greased 8 x 8 inch cake/pie pan and bake at 350 degree Fahrenheit oven until cracks appear on the top. Cool slightly before cutting into brownies.
Note: I have not tried adding cacao nibs, but they would be great in this recipe.
